When you pull up A CARROT and find it puny, you blame yourself (you watered wrong; you didn’t amend the soil). More often than not, though, you just didn’t read the crop’s calendar correctely.
Growing vegetables isn’t a straight-A+ list; it’s a sequence of behind-the-scenes hand-offs. Break that out on the chart, and there are really only three stages: emergence and vegetative growth, and then reproduction. Knowing what stage each plant is in shift how you tend it.
Three Stages of Plant Growth
The first thing is emergence. This is the point when the seed reserve give way to growing foliage and the shoot breaks through surface of the ground. Sounds easy enough, but how fast this happens depend entirely on the species involved. Asparagus may unfurl in three weeks; lettuce may appear within one.
And that’s where gardeners go awry: They think if something takes longer, it has failed; no, it’s putting all its energy into setting down roots (which you don’t see). Think of emergence as a timing thing, of each individual crop, not a race. So what if your asparagus isn’t catching up with the lettuce? Not failing… It’s just pacing itself.
After the plant’s up, it go into what’s called the vegetative stage. That’s when the plant’s shape is determined by the growth of new parts, and later storage tissues or buds will take over. Here the visual cues is slight but important. What you want to see are structural changes, not just growth (as in increasing height).
Kohlrabi starts developing a bulbous stem aboveground; celery develops an inner tight heart. A closed spear asparagus becomes a branched fern. These is not random mutations, but purposeful adjustments of resource allocations. Is the plant creating stems, or roots, or leaves? Watch for the shape shift; it is a better clue different than dates on the calendar. Too soon and you’ll miss out on the bulk. Wait too long and things may get tough.
Reproduction is the last handoff: the flower opens, pollination occurs and the fruit forms. But this phase brings in the set architecture of every plant family’s design: Tomato flowers has five lobes; onion flowers (technically called tepals) have six. That’s stable identification, and it transforms what was a short-lived blossom into a marker of change.
What’s really best about measuring fruit? More often than not, it’s color, not size. Color is a good gauge for tomato ripening as they changes pigments, moving through stages from green to breaker and pink before finally turning red. So how do we know when? The USDA defines their stages by the percentage of surface color, moving from mature green through breaker to pink and then red. A large-looking fruit can still be internally green. While the fruit inside is changing from mature green to fully red, surface color is a consistent developmental measure, which you can count on again and again.
The other split is a matter of mechanics: Which seeds come up underground (cotyledons stay hidden in the ground, as with peas) and which come up above ground (the cotyledon pop out of the earth, such as with snap beans). This is important because you will treat them different early on. With underground seedlings it can be difficult to see them right away; with above-ground ones, their food supply are at risk of rotting. Know what you’re looking for: Cotyledon placement, not just time planted.
Growth isn’t linear; there is no standard shape of development. Each crop has its own progression of events. This include a combination of leaf form, signs of organ initiation, and then senescence (decline). One point along the way can only make sense by what comes directly before or after. Measure in forms instead of days, and the garden will read itself.
You’ll begin to notice the subtle transition from leaf to flower, from green to red, from seed to stem. That carrot might be tiny, but you’ll know precisely what’s happening.
Growth isn’t merely a matter of waiting for time to pass: It’s watching who hands off to whom. You should of noticed the signs.
