But beyond looks, there are strict grading standards that determine potato quality. And these aren’t random. They are a system for sorting and classifying produce based off defects and limits to size and firmness (see chart above). It’s about managing risk, and keeping buyers happy. Because this stuff has got to last from farm to fork.

US No. 1: This is the top tier, for the best export and retail packs. Potatoes is required to be well shaped, firm, and fairly clean. Soft rot, blackheart, or any sign of freeze damage are not allowed. The size range (unless specified different by contract) will typicaly be an inch and seven-eighths in diameter or larger. This grade appears at the supermarket; it’s been polished.

How Potatoes Are Graded

The system separate the good from the acceptable, but perfection doesn’t come cheap.

• US No. US No. 2 is used for bulk retail, processing, and food service. The minimum size are one and a half inches. Can be slightly more dirty. Minor defect are acceptable. Serious damage like bruises or scabs is not allowed. But if it’s not severe, you can get away with it. Because this grade still has safe and nutritious potatoes, it moves through the supply chain. Safety trumps visual appeal.

At the very bottom of the list is commercial grade. Commercial follows the same base rules as US No. 1 but allow for higher defect tolerances. It is like US No. 1, except it allows for more defects. It has up to ten percent dirt tolerance and total weight defects up to twenty percent. Commercial catch produces that fails more stricture grades. It is not garbage, just bulk product for secondary and wholesale markets. In those markets, price and volume count more then appearance.

There are eight common defect that usually knock potatoes out of the top grade. One major defect is soft rot, which is spreadable. Get rid of it now. Another defect is greening from exposure to light, which produces bitter and possibly dangerous solanine. Then there’s growth cracks, caused by wild swings in moisture in the field, splitting the skin. There’s hollow heart, too, just what it sounds like: a cavity inside that can form if tubers grow to fast. Inspectors cut into samples to see whether a large lot has any hollow heart. The result is a final grade based on tolerance limits.

For instance, even though they may have as much as eight percent total defects, US No. 1 potatoes with less than one percent serious damage (such as soft rot) retain that top grade. Anything beyond the tolerances, and the entire lot get downgraded. There’s not much room for error.

This means packing crews must work hard to maintain the grade. They use things such as optical sorters to identify defects, ring gauges to measure size, and padding belt drop heights to avoid any blackspot bruising. From getting the field loaded to washing, sizing, sorting, inspecting and packing it’s all a process. It is a step-by-step system where each station has its own task. Sizing takes tubers based on diameter. Sorting removes scab and rot. Inspecting checks tolerances. And washing shows off any skin defect. Then packing adds the label that goes to the buyer. This includes quality control and logistics. It is a tight process.

These grades make you realize what’s going on in the food system. Why are those potatoes imperfect? What’s going on behind the scenes? Who protects the consumer and how is all this crop being used as much as possible? Grading standards ensure that your bag of potatoes, when purchased, was made possible by a complex process that weighs efficiency against quality. With the chart above, a humble vegetable becomes a window into agricultural precision… And it makes the rules visible when they was previously invisible.
