Spinach needs around one to one and a half inches of Water each week. If it does not rain, then you must take care of the Water. The key is to spread that weekly amount over some days, rather than giving everything at once to the plants.
Three or four times of watering during the week are better than one strong watering. The roots of Spinach do not go deeply in the ground, so they can not reach moisture from deeper down. Watering several times weekly you keep the right moisture in that surface layer, where the roots truly grow and feed.
How to Water Spinach
The kind of soil, the temperature and the amount of sunshine, that the plants receive, everything affects how thristy Spinach becomes. When the weather warms, the needs for Water also grow. During warmer periods, around two inches per week usually work.
